| I made a huge batch of my favorite summertime (or anytime) salad this week. We're finishing it off for supper. It's super easy, pretty inexpensive and wonderfully delicious. I thought I'd share it with you:
Ramen Chicken Salad
2 packages oriental ramen noodles with seasoning packets 16 oz. cole slaw mix (or shredded cabbage of your choice) 1 large can mandarin oranges, drained 1 large can cooked chicken breast, or cubed cooked chicken of your choice 1 cup sliced almonds 1/4-1/2 cup chopped cilantro - to your taste preference 2-4 green onions, chopped - to your taste preference
Dressing: 2 packets ramen seasoning 2 tbsps. vegetable oil 2 tbsps. sesame oil 1/2 cup rice vinegar 1 tsp. salt 1/2 tsp. pepper 2 tsp. sugar
Mix dressing ingredients together in bowl. In another large bowl, break up uncooked ramen noodles. Mix in salad ingredients, combinging all together and pour dressing over. This is best eaten right away, as you don't want the noodles to get soggy (well, I don't, but you might). |

| Ali - I don't know quantities - but it makes A LOT. LOL
You could easily half it. Let's see - I made a batch last week. The girls and I had some for supper that night. Then I took some for lunch the next day and Ashley had some for lunch also. Then Saturday there was still enough left for Ashley and I to have another small serving. |
