| My daughter has just sent me this recipe from her Slimming World recipe folder. I have eaten it previously at her home and it is so delicious...
serves 4 & you can freeze it as well ingredients fry light (or oil) 1 onion finely chopped i garlic clove, crushed ( I use the lazy garlic stuff from the supermarket) 2 carrots, chopped 2 sticks of celery, chopped375g/14oz can of chopped tomatoes 1.2 litres/2pts vegetable stock 57g/20oz dried spaghetti, broken into short lengths 113g/4oz frozen peas 170g/6oz green cabbage, chopped 1 leek, chopped 1 tsp dried basil salt & pepper method put the oil/fry light in a frying pan & cook the onion for about 5 mins until soft. Add the garlic, carrots & celery & contiue cooking for 2-3 minutes add the tomatoes, stock & spaghetti & bring to the boil, reduce the heat & simmer for about 20 minutes stir in the frozen peas, cabbage, leek & basil & simmer for a further 20 mins, adding a little water if necessary. season to taste. Enjoy!
