Scrummy apple bread, great eaten with just butter spread on, or with cheese or pork terrines.

This makes 4 loaves.
You will need
2 bramley cooking apples, peeled, cored and sliced
225ml (8fl oz) water
3 braeburn or other eating apples, peeled, cored and sliced into 1cm squares
115g (4oz) butter
450g (1lb) wholemeal flour
225g (8oz) strong white bread flour
3 tsp salt
1 sachet of easy blend yeast
50g(2oz) caster sugar
1 egg yolk lightly beaten for glazing

Put the bramley apples in a pan with half the water and simmer to a puree. Fry the eating apples lightly in 30g (1oz) of the butter until golden brown in colour.
In a large bowl place all the brown and white flour and salt. Melt the remaining butter and set to one side to cool slightly. Heat the remaining water until tepid. Put the sachet of yeast , the caster sugar, melted butter and water in with the flour mixture. Now add the slightly warm bramley apple puree and the fried eating apples . Stir with a wooden spoon then bring together with your hands into a dough. If the dough seems to dry and will not hold together, add a little water. If it seems to wet, add a little flour.
Place the dough on a lightly floured surface and knead for 10-15 minutes, until smooth. Put in a clean bowl, cover with lightly oiled clingfilm and place in a warm area until doubled in size.
Knead again for about a minute, then divide it into 4 pieces, shape into loaves, and place on a lightly oiled baking tray. Allow to prove for about 30 minutes in a warm place, then glaze the loaves with the egg yolk. Preheat the oven to gas mark 4.
Bake for 35 minutes. Remove the loaves and tap them on the bottom to ensure they sound hollow. If not, put them back in the oven for afew more minutes. Place the loaves on a wire cooling tray.

Enjoy.

I was going through some old recipes and I thought this sounded delightful. Have you made this Melanie? If so, about how long would it take from start to finish to make would you say?

I have not got round to making this yet, but I thought that the recipe sounds delicious, so I put it on here to share with all you girls. I will make it, some day, but if any of you make it before me, please let me know what you think of it.
